Eggs once a week are awesome

Firstly, eggs are so easy to add to a school lunch box.  Boil an egg between 8 and 10 minutes for it to be hard boiled. You can boil them the night before too.  I try and give my girls an egg a week at a minimum. They’re simple and can easily be the hero of the school lunch box.

The benefits of eggs

Eggs are incredibly nutritious, they contain the following Vitamins: A, B5, B12 & B2, D, E & K, also Folate, Phosphorus & Selenium, Calcium and Zink. How awesome!  Eggs are great for the growing eyes of children.

Source of Protein

Eggs are a great source of protein, for vegetarian lifestyles, eggs are a great source of protein and it’s recommended that eggs are eaten 2 to 3 times a week.  Children need the protein for muscle recovery and growth.

Ideas?

I find it easy to hard boil eggs and pop them into the lunch box without the shell. There are many other ways to have eggs in a lunch box.  Scrambled eggs in a wrap or sandwich, eggs in a stir fry or even eggs in a quiche. Share with us your ideas….
