Ok, this is one of my favourite creations, the Berry Delight. I love watching people make muffins and cakes, but I’m a dad, I’m always looking for the easy way out. So I thought that I could create dough without having to make it. Bang! welcome Puff Pastry. Why not throw it in the blender and see what happens. Well, it worked! yay! So here it is.
What you need:
- Puff pastry, I just buy the cheapest.
- Oven or Air Fryer
I blend the berries and the puff pastry for about 10-12 seconds, I’m not sure really I wasn’t counting.
It should like this: almost looks like a Berry salad.
Using a couple of tea spoons scoop some out and create round type balls, I did my best, they kind of look roundish. I love my air fryer, so pop them in for 10 minutes on 170 or in a normal oven for 18-20 minutes on 175-180. How do you know when they’re ready? Just eat them and try.
They’re a great snack, they look awesome in cupcakes and most importantly they’re a great addition to the School Lunch Box.
